Coffee from Tarrazu is recognized widely as the most highly prized coffee in Costa Rica, and the “top of the mountain” coffee, in the region of Dota, is really the only true optimal Tarrazu. The Dota Tarrazu region is considered one of the top volcanic soil growing regions in the world. Many vendors label their coffee Tarrazu but it is grown in the valley or nearby region, which imparts a different terroir and produces a softer bean. True Dota Estate-Grown coffee is rated SHB, or Strictly Hard Bean, and cups in the 90’s typically.

Our Dota Terrazu estate-grown coffee is the cream of the crop from three contiguous plots of land at the 6000-foot peak of the mountain. Multiple pickings result in the ripest coffee, and exacting quality standards provide a premium bean. Please note these beans are classified as SHB (Strictly Hard Bean) due to the altitude and density of the bean… sometimes SHB coffee takes longer to roast in low-power machines like corn poppers.

Flavor notes: Strong brown sugar and caramel tones, fruity. Chocolate tones will come through when roasted at lower temperatures for longer periods. The brown sugar note is stronger in a medium roast than in a dark roast. Acidity: Relatively low. Caffeine level: Relatively low, due to high altitude. Processing: Multiple pickings of ripest beans, raised-tray-dried in the sun 7 days.

This semi-wash process uses very little water and allows retention of some of the fruit pulp, which enriches the bean as it ripens, imparting a honey/brown sugar note and a fruity tone. The beans are spread out immediately to sun dry in clear tunnels on raised screen trays over the course of several days.

Because this farm goes straight from their own mill to the drying bed, these beans are ultra clean, free of fermentation, and are an excellent choice for green-bean extracts, beverages and white coffee recipes.

Smooth, Rich, Tasty This makes a very good cup of coffee, but needs more than a light roast. I tried roasting these the same way that I did some Ethiopian beans, using a roast that was nearing the end of first crack, and although that works well with the Ethiopian beans it left these tasting a bit ‘grainy’. On my next attempt I dropped the heat a bit before hitting first crack and went a minute after first crack ended. This produced a darker bean color with much less of the grainy taste of the light roast. I…

Yummy at full city or full city + Roasted to an early but established second crack, these beans produce a nice rich and mellow cup with chocolate and caramel and a wonderful fragrance while keeping a hint of brightness to give a great balance.The beans are well sealed and are dated, unlike other suppliers that don’t date green beans. Color is a rich green with uniform size. The beans roast fairly evenly and they produce a *lot* of chaff. This is one of my favorite go-to coffees.

Quality bean for those seeking acidic quality An excellent roasting bean, however, it’s acidity isn’t to my liking. I give it 4 stars because those who’s palates prefer/enjoy coffees with more acidity, may greatly enjoy this coffee.It’s a quality unroasted bean and I believe that whose who enjoy these flavor characteristics will find little to complain about in the end product.I still have about 1/4 of a bag to roast as I only cook enough to last about 4-5 days at a time. I’ll try a lighter roast to see if it pulls…
